Honey-Maple Trail Mix

A DaVita dietitian shares a kidney-friendly snack that is both nutritious and delicious: Honey-Maple Snack Mix.

Portions: 24     Serving size: 1 cup

Ingredients

    • 3 cups Golden Grahams® cereal
    • 5 cups Rice Chex® cereal
    • 10 ounces Cinnamon Teddy Grahams® snack cookies
    • 6 ounces Pretzel Crisps®
    • 1/2 cup unsalted butter
    • 1/3 cup dark brown sugar
    • 1/4 cup honey
    • 1/4 cup maple syrup
    • 5 ounces dried cranberries, sweetened
    • 3 ounces Crispy Granny Smith Apple Chips®

Preparation

    1. Combine Golden Grahams, Rice Chex, Teddy Grahams and pretzels in a large bowl.
    2. Melt butter in a small saucepan; add brown sugar, honey and maple syrup. Cook over low heat until sugar is melted.
    3. Pour over cereal mixture and mix well until all pieces are coated.
    4. Preheat oven to 325° F.
    5. Prepare 3 jelly roll pans by lining with aluminum foil and spraying the foil with cooking spray. (Can be done in 3 batches). Spread cereal mixture evenly over pans. Bake at 325° F for 20 minutes; stirring once halfway though. 
    6. Mix cranberries and Apple Chips; divide evenly among pans and stir.
    7. Bake 5 more minutes; cool completely and store in an airtight container.

Helpful hints

  • For an extra twist sprinkle trail mix with Mrs. Dash® Carribean Citrus or Fiesta Lime seasoning blend.
  • If  Pretzel Crisps® are unavailable substitute a 10-ounce bag mini pretzel twists.
  • If you have diabetes, reduce portion size to 1/2 cup for a lower carbohydrate snack.
  • Look in the produce section for apple chips if you do not find it in the snack section.
  • Share extra servings with family and friends or cut recipe in half to make less.

I made this tonight very delicious I was going to bag a cup of it in small sandwich bags for each patient at dialysis but my family got to it first. I found the apple chips at Walmart where the raisins are there was nothing in the produce aisle however I believe I've seen the apple chips at HyVee in the produce aisle I will have to check next time. I also broke up each apple piece into 3 pieces I think next time I will add more apple and cranberry since I love fruit.

thank you for this great recipe! I am looking forward to making it for a Thanksgiving treat. I live with several people who are diabetics, but I am the only one on dialysis. This will surely go over very well. Now I want to check out other recipes also. Helen in California Oh, yes, some ovens are hotter than others. Also there is a recommendation to do one tray at a time. That might take care of the burning issue.

Couldn't find apple chips, even without them this is a yummy snack! Moderator comment: Look in the produce section--sometimes the apple chips are found there instead of the chip isle.

Agree with jstenske682; this started smoking after about 10 minutes, and burned the pan that was last out. I just added the apples and craisens and din't put it back in the oven.

I have made this recipe quite a few time. Excellent recipe. My family loves it too. The only problem I have had is it seems to burn easily. I have had to shorten the baking time up and lower the temperature of the oven.
