Tortilla Rollups

Recipe from "Cooking for David: A Culinary Dialysis Cookbook" by Sara Colman RD, CDE and Dorothy Gordon BS, RN.

Portions: 4

Serving size: 3 pieces


  • 1/2 cup raw spinach leaves 
  • 2 tablespoons onion 
  • 2 tablespoons pimento 
  • 3 ounces unprocessed cooked turkey breast
  • 1/2 cup crushed pineapple
  • 1/2 cup whipped cream cheese
  • 2 flour tortillas, burrito size 
  • 1 teaspoon Mrs. Dash® original herb seasoning blend


    1. Chop spinach. Dice onion, pimento and turkey breast. Drain pineapple.
    2. Spread cream cheese over each tortilla to cover. Sprinkle with Mrs. Dash® herb seasoning.
    3. Place remaining ingredients in a bowl and mix. 
    4. Divide mixed ingredients into 2 portions.  Place half on each tortillas and roll up like a jelly roll.
    5. Trim ends and slice each roll into 6 pieces.

  • Wrap un-cut roll in plastic wrap and refrigerate until ready to cut and serve.

Is all red meat bad? I think this website here been very husband has a Dr.but we were never put on any diet . we were told to lower salt.he has one kidney and it has went from 3 to 5 creative. Dietitian comment: The best red meats to include on a kidney diet are the leanest cuts. Read DaVita Dietitian Shannon's Kidney Diet Tips Q&A forum post about the best choices at[INVALID]?7616-Should-red-meat-be-avoided-on-the-kidney-diet. A second consideration is how much meat to include. A healthy diet includes no more than 6 ounces meat, poultry of seafood daily. If on a lower protein diet this amount may be less.
