Wonton Quiche Minis

Imagine peppers, ham and green onions wrapped in a crispy wonton wrapper and served bite-sized and hot from the oven. Trisha from Nevada serves up some tasty tidbit in her dialysis diet recipe for Wonton Quiche Minis.

Portions: 12     Serving size: 2 pieces


  • 1 ounce lean cooked ham
  • 2 tablespoons green onions
  • 2 tablespoons sweet red pepper
  • 5 large eggs
  • 1 tablespoon all-purpose white flour
  • 24 wonton wrappers (3-1/4” x 3”)


    1. Preheat oven to 350° F.
    2. Finely chop ham. Chop green onions and red pepper.
    3. In a medium bowl, beat together eggs, ham, onions, pepper and flour until well combined and set aside.     
    4. Lightly coat 24 miniature muffin cups with cooking spray. Line cups by gently pressing the center of 1 wonton wrapper into each cup, allowing ends to extend above edges of cup.
    5. Spoon the egg mixture into the wonton-lined cups, dividing evenly among all 24 cups.
    6. Bake for 12 to 15 minutes or until toothpick inserted near center comes out clean.

Helpful hints

  • Mini muffin cup size is 1-3/4” x 3/4”.
  • Substitute 1-1/4 cups low-cholesterol egg product for the eggs to reduce cholesterol.

What are wonton wrappers? Dietitian comment: Wonton wrappers are a dough made of flour, egg, water and salt, rolled very flat and cut into squares. They are used to make Chinese dumplings, served in soup or fried. You can usually find them frozen or refrigerated in the Asian section of a large supermarket. You can also find recipes online to make homemade wonton wrappers.

WHY is this recipe only suitable for dialysis? Dietitian [INVALID]: This is a great appetizer choice because it provieds 4 grams of protein while low in sodium and potassium. If low cholesterol egg product is used it's also lower in phosphorus and cholesterol.
