All American Meatloaf

Portions: 6     Serving size: 1/6 slice of loaf

Ingredients

  • 20 squares saltine-type crackers, unsalted tops
  • 2 tablespoons onion
  • 1 pound lean ground beef (10% fat)
  • 1 large egg
  • 2 tablespoons liquid nondairy creamer
  • 1/4 teaspoon ground black pepper
  • 1/3 cup catsup
  • 1 tablespoon brown sugar
  • 1/2 teaspoon apple cider vinegar
  • 1 teaspoon milk

Preparation

    1. Preheat oven to 350° F.
    2. Finely crush crackers; finely chop onion.
    3. Coat a loaf pan lightly with nonstick cooking spray.
    4. In large bowl, combine ground beef, egg, crushed crackers, onion, nondairy creamer and black pepper. Mix well.
    5. Form into a loaf and place in loaf pan. Bake for 40 minutes.
    6. To make topping sauce, mix catsup, brown sugar, vinegar and milk in a small bowl.
    7. Remove cooked meatloaf from oven and cover with sauce.
    8. Return pan to oven and bake for 10 additional minutes or until internal temperature reaches 160° F.
    9. Slice into 6 portions before serving.

Helpful hints

    • To finely crush crackers, place them in large zip-lock type plastic bag and crush with a rolling pin.
    • Use leftover meatloaf to make sandwiches.

My husband loved this. We did agree however, that the next time I make it, I am going to add 1-2 tablespoons of the sauce, right into the meat itself, then spread the rest on top of the meat as instructed in the directions. Also, I used Ground Round. We did not buy it at the grocery store, we went to the butcher shop and bought it. Found out it has a maximum of 5% fat. This made an incredible meatloaf. It was not dry. It was not greasy. It was awesome. I suggest Ground Round for this meal. I also didn't have saltines, so I used Back To Nature Classic Round Crackers. They are 100% natural and really good. This is definitely a keeper.

The Meatloaf was very good and we loved the sauce for the top! I added some extra seasonings and diced a garlic to put in it. I am new to this with and I amin late stage 3 and so I thought I would try a few things and learn as much as I could before my dr appt in 2 weeks. We did this on the grill and it was delicious and my hubby loved it also and said he would like to have it again. Thank you for the wonderful recipes and this site has so much info!

I made this meatloaf as a "loaf" and didn't care for it that much, but I used my cupcake holder and it was delicious. Only two at a time, have to watch my husbands potassium and phosphorus, you know. I am going to try it in my crock-pot just to see have it tastes.

I noticed that this calls for brown sugar. On our food list brown sugar is on the avoid list. Why? Moderator Comment: Brown sugar contains molasses, a source of potassium. 1/2 cup of packed brown sugar sontains 146 mg potassium whereas white sugar has only 2 mg. You can still use brown sugar. The most important thing is the potassium content of the final product.

Love this meat loaf. We make this once a week. We use ground turkey instead of ground beef and use Egg beaters for the 'egg' portion. Very tasty, expecially with the sauch topping.

Read the label for a jar of mustard ingredients and see what it says. Moderator: 1 teaspoon of mustard has only 7 mg potassium. It may be substituted in this recipe if desired.

We really enjoyed this recipe. Used splenda brown sugar and sauce was great. Added onion, bell pepper and minced garlic to meat mixture for additional flavor.

I am so happy to see a recipe that I can use catsup, as I received a renal diet which said to not use tomatoes and tomato sauce, and i assumed this also met catsup. Does this mean that I can also use a little on a burger?

We have a 13 year old with a failing kidney. It is a struggle to find recipes the whole family enjoys. Unfortunately, our 13 yr old did not care for this, but three other family members (including me!) liked this meatloaf a lot. So I would recommend giving this one a try. We used no salt added catsup.

I mixed all ingred. in a bowl before reading the directions and it tasted great and moist. Made the topping and used just a little on top. My family loved it.

Awesome recipe! One change could be a bit more brown sugar for the topping. I think using a little less than 1/4 cup makes the sauce amazing. I also baked this in mini loaves. 1/4 of the meat per loaf.
