All American Meatloaf

Portions: 6     Serving size: 1/6 slice of loaf

Ingredients

    • nonstick cooking spray or oil to grease pan
    • 1 pound lean ground beef (10% fat)
    • 1 egg
    • 20 squares saltine-type crackers, unsalted tops, finely crushed
    • 2 tablespoons onion, finely chopped
    • 2 tablespoons liquid nondairy creamer
    • 1/4 teaspoon ground black pepper
    • 1/3 cup catsup
    • 1 tablespoon brown sugar
    • 1/2 teaspoon apple cider vinegar
    • 1 teaspoon milk

Preparation

    1. Preheat oven to 350° F.
    2. Coat a loaf pan lightly with nonstick cooking spray or oil
    3. In large bowl, combine ground beef, egg, finely crushed crackers, onion, nondairy creamer and black pepper. Mix well.
    4. Form into a loaf and place in loaf pan. Bake for 40 minutes.
    5. To make topping sauce, mix catsup, brown sugar, vinegar and milk in a small bowl.
    6. Remove cooked meatloaf from oven and cover with sauce.
    7. Return pan to oven and bake for 10 additional minutes or until internal temperature reaches 160° F.
    8. Slice into 6 portions before serving.

Helpful hints

    • To finely crush crackers, place them in large zip-lock type plastic bag and crush with a rolling pin.
    • Use leftover meatloaf to make sandwiches.

Love this meat loaf. We make this once a week. We use ground turkey instead of ground beef and use Egg beaters for the 'egg' portion. Very tasty, expecially with the sauch topping.

Read the label for a jar of mustard ingredients and see what it says. Moderator: 1 teaspoon of mustard has only 7 mg potassium. It may be substituted in this recipe if desired.

I am so happy to see a recipe that I can use catsup, as I received a renal diet which said to not use tomatoes and tomato sauce, and i assumed this also met catsup. Does this mean that I can also use a little on a burger?

We have a 13 year old with a failing kidney. It is a struggle to find recipes the whole family enjoys. Unfortunately, our 13 yr old did not care for this, but three other family members (including me!) liked this meatloaf a lot. So I would recommend giving this one a try. We used no salt added catsup.

Awesome recipe! One change could be a bit more brown sugar for the topping. I think using a little less than 1/4 cup makes the sauce amazing. I also baked this in mini loaves. 1/4 of the meat per loaf.
