Crock-Pot® Fruited Pork Loin Roast

You will fill your kitchen with the fresh aroma of rosemary, ginger and fruits when you cook up the Crock-Pot® Fruited Pork Loin Roast. DaVita renal dietitian Jean from Minnesota shares this go-to comfort food for people on a kidney diet.

Portions: 12     Serving size: 3 ounces

Ingredients

    • 1 large apple
    • 3 pounds pork loin
    • 1/4  teaspoon pepper
    • 1/4 teaspoon ground ginger
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon ground mustard
    • 1/2 teaspoon dried rosemary
    • 1/3 cup apple juice
    • 1/3 cup pineapple juice
    • 1/3 cup lemon juice
    • 1 cup whole-berry canned cranberry sauce
    • 2 tablespoons dried parsley

Preparation

    1. Slice unpeeled apple into thin wedges.
    2. Rub loin with dried seasonings and place in a 3-quart Crock-Pot.
    3. Combine fruit juices & cranberry sauce, and pour over meat.
    4. Place apple wedges and parsley around roast.
    5. Cover and cook on low for 8 to 10 hours.
    6. Transfer to serving platter. Wait 10 minutes then slice.
    7. Pour cooking juices and fruit over slices before serving.

I made this pork roast to take to a party and it received rave reviews from everyone. It was simple to make and very flavorful. I shredded leftovers, mixed with a little bbq sauce and it made great sandwiches for the next day!
