Individual Meat Loaves

lindy66 says:

I just made this meatloaf tonight, except I did the same thing jaynjay did - used an ice cream scoop to put into muffin tin. I must say, this was the BEST meatloaf I've ever made! My husband kept saying how great it was. I didn't have any brown sugar so I used regular sugar but didn't use as much as called for. This was wonderful tasting. Try it - you and your family will rave about it!!!!

I used an ice cream scoop to portion this into muffin tins (leaving a little bit of room at the top to allow for the topping). I got great reviews with this recipe! I love that you can put the individual portions in freezer-safe containers and have a high protein, quickly reheated meal.
