Italian Style Shredded Beef

Old-fashioned, slow-simmered comfort food is a great way to describe this kidney-friendly recipe for Italian-Style Shredded Beef, by DaVita renal dietitian, Connie from Virginia.

Portions: 8     Serving size: 3 ounces beef + 1 roll


  • 1/2 cup onion, chopped
  • 2 cloves garlic, crushed
  • 1 tablespoon Italian herb seasoning
  • 1 bay leaf
  • 1 teaspoon parsley, crushed
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • 2 tablespoons olive oil
  • 1/2 cup red wine
  • 1/3 cup vinegar
  • 2 to 3 cups water
  • 2 pound beef rump roast
  • 8 hard rolls, 3-1/2” diameter, 2 ounces each


  1. Combine all ingredients except beef roast and rolls in a Crock-Pot and mix well.
  2. Add roast to Crock-Pot.
  3. Cook on high-heat setting for 4 to 5 hours, until fork-tender.
  4. Remove roast from Crock-Pot. Shred with two forks then return meat to crock pot liquid to keep warm until ready to serve.
  5. Serve on hard rolls.

Helpful hints

    • Substitute fresh onion and garlic with 1 teaspoon onion powder and 1 teaspoon garlic powder. Fresh gives a better flavor, however.
    • Portion leftover Italian-Style Shredded Beef into 3-ounce servings, store in freezer bags and freeze for a quick, easy meal at a later time.
    • For a lower-protein diet, reduce meat portion according to your diet plan or consult with your dietitian.

We made this for a protein days tasting in the unit and served it in little medicine cups. Easy-could put in crock pot and let cook all day. Patients liked it.

This was really tasty. The sauce it makes is a little different. Not at all like a gravy. I'm gonna try thickening it up when I reheat with a little cornstarch. I will for sure make this again.
