Meat and Rice Balls

Meat and Rice Balls isn’t the original name of this tasty kidney-friendly recipe. These beef and rice meatballs were nicknamed Porcupine Balls because the rice sticks up like quills, just like a porcupine. The recipe is from DaVita renal dietitian, Ken from Missouri, and it’s an old family favorite that’s been tried and tested over the years.

Meat and Rice Balls

I made this recipe with regular long grain rice as I had no instant rice available and it came out great. In my next attempt, I will season the meat before making the meatballs as they were a little bland in the middle. As a side note, I would love to see a recipe box where members can save recipes for later use so you don't have to constantly search for the same recipes over and over again.
