Soft Tacos with Mexican Seasoning

Many ethnic meals have become American meals, and people on a kidney diet also want to enjoy the unique flavors they have come to enjoy from other countries. Soft Tacos with Mexican Seasoning is a kidney-friendly recipe that lets kidney patients keep taco night on their weekly menu.

Portions: 7     Serving size: 2 tacos

Ingredients

  • 1 recipe Mexican Seasoning (under Sauces and Seasoning in Recipe section of DaVita.com)
  • 1 pound ground beef, browned and drained
  • 1/2 cup low-sodium tomato sauce 
  • 14 six-inch flour tortillas, warm
  • 5 tablespoons sharp cheddar cheese, shredded
  • 1 cup lettuce, chopped
  • 5 tablespoons onion, chopped
  • 5 tablespoons sour cream

Preparation

  1. Make Mexican Seasoning recipe (under Sauces and Seasoning in Recipe section of DaVita.com). 
  2. Brown and drain 1-pound ground beef. Add seasoning mixture and low-sodium tomato sauce. Heat over medium heat.
  3. To assemble soft tacos, take 1 flour tortilla, add 1/4 cup seasoned ground beef, 1 teaspoon cheese, 1 teaspoon onion, 1 teaspoon sour cream and lettuce as desired.

    Most flour tortillas are incredibly high sodium content. Will you please post your recipe - or brand - of flour tortillas used here to keep total sodium (including cheese, etc.) at 309? Sure would appreciate it! This taco meal sounds like a wonderful treat. Dietitian comment: You are right[INVALID]most commercially prepared tortillas contain baking powder which increases sodium and phosphorus. The brand used in analysis is Mariachi with 134 mg sodium for a 6-inch tortilla. The USDA database has a generic 6-inch flour tortilla with 153 mg sodium. On DaVita.com in the Breads recipe category you will find a homemade tortilla recipe with only 60 mg sodium per tortilla.

    I am a DaVita renal dietitian and made this recipe for my patients. Everyone, both patients and teammates LOVED IT! The Mexican Seasoning recipe is very good, OR try the new Mrs. Dash FIESTA LIME blend -- use about 2 Tablespoons.
