This recipe sounds good However I thought that I can't have tomatoes on a renal diet. I am diabetic and on dialysis. I loved stuffed peppers before I went on dialysis. Looking for something that will taste good. Dietitian comment: Most people on a low potassium kidney diet can add a small amount of higher potassium vegetable and still stay within their daily targets. Try the Nutrition Tracker feature in DaVita Diet Helper to see how much potassium you eat when including this recipe. You can plan the recipe into your meal directly from Diet Helper.

I'm wondering how I can make this with the sodium level lower than 200 and potassium level needs to be cut in half? My mother in law is a diabetic and starting dialysis. she was told her diet is to be low carb - no carb, low sodium and lower potassium levels. I am going to use ground turkey instead of beef. Dietitian comment: You can substitute sauce made from roasted red bell peppers for tomato sauce, and cut the peppers in half vertically and stuff the 'boats' with the ground meat. Both of these will reduce potassium. Sodium is already quite low for an entree.

Is white rice better for kidney disease? or, can we use brown instead? Moderator comment: If you need strict control of phosphorus and potassium white rice is the best choice. If you do not have phosphorus or potassium issues the brown rice is acceptable. The difference made with brown rice is an extra 60 mg phosphorus and 20 mg potassium per 1/2 cup cooked rice. Hemodialysis patients may require an extra phosphorus binder--check with the renal dietitian.

Should recipe not state to parboil peppers and add some water to baking pan? Or does this somehow change the recipe? Moderatoir comment: Because the cooking time is an hour it is not neccessary to parboil the peppers, but you may do so if desired.

Any LEAN ground meat will work try for as lean as you can find a meatloaf blend of pork beef and turkey works good too make sure it is well browned and pour off the grease that accumulates before you mix with other ingredients. often I use apple cider vinegar in place of tomatoes to provide the tartness less the extra potassium for color add a bit of red pepper flakes cumin and bits of colored bell pepper.

What options do you have other than tomato sauce for this? I'd like to lower the potassium count in this dish, but I don't want to ruin the consistency. Thanks for all you do! This is fantastic Moderator comment: You can use the Roasted Red Pepper Sauce instead. Check the recipe on DaVita.com.

I love your recipes but some of your ingredients are not available in South Africa and I am not sure what to replace them with. Moderator: Let us know and we will suggest substitute ingredients.

What kind of ground beef do I use if I am in stage 3? I have not tried it yet because of the beef. Moderator resonse: You can use ground beef that is 90% lean/10% fat or for even lower fat content substitute ground turkey 7% fat for the beef.
