Stacy's Stroganoff

Almost everyone has a favorite beef stroganoff recipe, this one is Stacy's. Stacy's Stroganoff is hearty, flavorful and only takes just three steps to prepare. For a twist on tradition, try turkey or wild meats, such as elk, to make it your favorite stroganoff. Enjoy this kidney-friendly version tonight.

Portions: 6     Serving size: 3/4 cup stroganoff plus 1 cup noodles

Ingredients

    • 2 small shallots 
    • 1 tablespoon butter
    • 1 pound ground beef
    • 8 ounces cream cheese
    • 1/2 teaspoon crushed garlic
    • 1/4 teaspoon paprika
    • 1/4 teaspoon thyme
    • 1/4 cup white wine
    • 1 teaspoon beef broth granules
    • 1 cup hot water
    • 1 tablespoons of vinegar
    • 1/4 teaspoon pepper
    • 1/8 teaspoon salt
    • 12 ounces egg noodles, uncooked

Preparation

    1. In a large skillet, sauté chopped shallots with butter until lightly browned. Add ground meat to skillet and cook until browned.
    2. Add cream cheese and stir constantly. Add remaining ingredients, except noodles, and stir. Reduce heat to low and simmer for 10 to 15 minutes.
    3. Prepare egg noodles according to package, but omit the salt. Serve stroganoff over egg noodles

Helpful hints

    • Use regular broth powder or granules because the low sodium version is very high in potassium. Limit to 1 teaspoon to keep sodium per serving in an acceptable range.
    • Stacy prepared this recipe with elk meat. Try it with your favorite wild meat or ground turkey or pork.

Love this recipe. I leave out the 1/8 tsp salt and don't miss it. I also leave out the wine and just add a little bit more water. One question... is the portion size correct? When I dish out 3/4 cup stroganoff and 1 cup noodles it seems like a lot! Moderator? Moderator comment: I agree it is a generous portion--but is is correct according to the recipe provided.

This stroganof is almost my favorite meal and my husband loves it too. I use ground sirloin and 1 tablespoon of vinegar.
