Lemon Cooler

Southwestern cooking from the Arizona region has its own vibrant personality, based on Spanish and Mexican influences. With all those spicy flavors, it's good to have a tasty and refreshing beverage to wash it all down. DaVita renal dietitian, Elaine from Arizona, offers her kidney-friendly recipe for Lemon Cooler.

Portions: 1     Serving size: 3/4 cup or 6 ounces


  • 4 large ice cubes
  • 1 tablespoon lemon juice
  • 1/4 cup cream, half & half
  • 3 tablespoons sugar


  1. Place all ingredients in a blender.
  2. Set on ice/crush setting and blend for 30 seconds to one minute or until ice is well chopped and slush is at desired consistency.
  3. Pour into a glass and garnish with lemon wedge, if desired.

  • 1/2 milk
  • 1 fat
  • 1 high calorie

Carbohydrate choices


Helpful hints

  • For diabetics substitute Splenda®  or other preferred low calorie sweetener for sugar.  Calories are reduced to 90 and carbohydrate is 6 grams.
  • May be used as a calorie booster for those who need extra calories in their diet.
  • Remember to count this toward your total daily fluid intake if you are on a fluid restriction.

I count my fluid so what is the fluid count in the lemon cooler? Dietitian comment: Count it as 6 ounces (3/4 cup) as all the ingredients except the sugar are counted as fluids.
