Lemon Smoothie

Lemon Smoothie is a refreshing beverage for people with diabetes who are on dialysis. Egg whites are in the recipe, which can be a great way to substitute other proteins in the kidney diet.

Portions: 1     Serving size: 9 ounces

Ingredients

    • 2 teaspoons lemon juice
    • 4 teaspoons sugar (use sugar substitute for diabetes)
    • 8 ounces pasteurized liquid egg white
    • 3 tablespoons nondairy frozen whipped topping

Preparation

  1. Combine all ingredients.
  2. Mix until whipped topping melts completely.

  • 1 high calorie

Helpful hints

  • Diabetics can substitute Equal®, Splenda® or other sugar substitute if desired. Carbohydrate is reduced to 6 grams per serving if sugar substitute is used instead of sugar.

new to all of this.. please tell me what and where I can get pasteurized liquid egg whites from? my husband starts dialysis on March 22 and I need to do some shopping to have food on hand when he gets home from the hospital. Dietitian comment: Any grocery store should have pasteurized liquid egg whites. You can find the product near the egg section. If you google liquid egg whites you can see some pictures of the carton and some brand names.

i believe the lemon smoothie has the wrong info check nutrients and renal food choices. Moderator response: No, these are the correct. The liquid egg whites used in the analysis are Eggbeaters brand and do contain a significant amount of sodium and potassium. The food choices are counted as meat because eggs and egg whites are more similar in nutrient content to meat than any of the other food groups. For comparison, the 28 grams of protein in the Lemon Smoothie is equivalent to the protein in 4 ounces of meat. The same amount of meat would contribute approximately 400 mg potassium and 260 mg phosphorus.
