Based on helpful reviews, I changed a few things to boost flavor: Inside muffins, used 1/2 white & 1/2 brown sugar; added approx. 1/8 tsp fresh grated nutmeg; 1/8 tsp fresh grated ginger; 1/4 tsp orange zest; subbed unsweetened apple juice for water. For topping (I like a bit more), increased white sugar to 2 tsps; added 2 tsp brown sugar; 3 tsp white flour; 1 tsp cold finely diced butter; 1/8 tsp fresh grated nutmeg and mixed all with fork until crumbs formed. This was enough topping for 1 slightly rounded tsp. per muffin. baked for 16-17 minutes.

I made these for my mother who is diabetic and has stage 3 kidney failure. She loved them. My 21 yr old son who is a carb/sugar monster adored them too and never knew I used Splenda. I made them again and tried enhance with a few more spices. They weren't as good. I'll not deviate from the recipe again. I also made them with Carbalose baking mix once. You could tell but if you are diabetic and on a really strict diet you might find them acceptable. (Mom did NOT like the Carbalose ones) but I thought they were ok.

Made these with following changes. Used apple juice instead of water, added an extra tsp. cinnamon and half cup chopped cranberries. Used brown sugar instead of white. Great flavor, nice for breakfast or snack.

The patients enjoyed these muffins. I made "sample sizes" in a mini muffin tin--cutting the baking time down to about 12-15 minutes.

I haven't tried this but am considering using unsweetened apple sauce sub for the oil in this recipe i know it works in some cakes to dodge the extra oil outside of that its a good recipe i add a bit of allspice or nutmeg with ground cloves to sub for cinnamon or in addition to it tastes like spice bread that way

Tasty and moist but a little too sweet...next batch will try less sugar, maybe just 1/2 cup. To Dree: Did you use just 1/2 tsp. of Stevia to replace the 1 cup of sugar???

I want to make this tomorrow! Any high altitude alterations? Moderator's reaponse: I live at sea level so can't try these out, but here are some recommended changes after researching baking in high altitude: Increase oven temp by 20 degrees F. Decrease baking soda to 3/4 teaspoon instead of 1 teaspoon. Increase water by 3 tablespoons. Let us know how your muffins come out with these changes.

is it baking soda or baking powder that you use in this. I know it says soda but I've never cooked with baking soda ... always used it for cleaning or killing odors. Moderator note: Yes it is baking soda which also acts as a leavening agent. Baking soda does not contain phosphorus and baking powder does.
