Why would you publish a recipe for12 servings? I would venture say that most kidney patients live in a household of 2-4. Just makes cooking tasks more difficult having to reduce ingredients. I realize it can be frozen divided into portions. Just another task in a life already overflowing. Dietitian comment: I understand you! I experience the same thing with various recipes. This initial recipe was created by a DaVita dietitian to serve to patients during a holiday brunch. I'm sure the recipe could be scaled down by 1/2 and still work wonderfully.

Can't wait to try this. Am new here and thank you for taking away my fear of having nothing to eat on a kidney diet! Also, answered my question whether this can be frozen as I live alone. Am going to try this very soon. Dietitian comment: I have never tried freezing this dish. You could make a smaller batch[INVALID]cut the recipe in half and use a smaller pan. Try freezing only one serving and see how it is after defrosting and reheating.

I made this recipe this morning for 3 non-kidney diet friends. They (as well as me) LOVED it! I stuck with the suggested 1-serving portion to stay on my diet, but I noticed the others helped themselves to more-only 2 pieces left at breakfast's end! Next time, I may cut down on the cream cheese just a little (personal preference), and cut down on sodium just a bit by using pure maple syrup. Delicious though; you won't be disappointed. :)

Recipe looks delicious, but it came up when I googled NON-dairy strata. Imagine my surprise to discover cream cheese is the second ingredient! Any substitutions for cream cheese suggested? Moderator comment: The cream cheese adds extra flavor and texture but this strata is still fabulous without it.

Made this recipe for my Sunday school class, and was the hit of the brunch. The smell of cinnamon filled the entire church! I used the regular cinnamon bread (no raisins) and it was great.
