Chorizo and Egg Tortilla

Chorizo is a traditional Spanish sausage with many variations of spices, and chili pepper is always included. Elaine from Arizona put her culinary skills to work and created the kidney-friendly recipe, Chorizo and Egg Tortilla.

Portions: 1     Serving size: 1/3 cup meat with one egg

Ingredients

  • 1/3 cup chorizo
  • 1 egg
  • 1 flour tortilla, 6" size

Preparation

  1. Cook 1/3-cup portion Easy Chorizo in a skillet on stove top, chopping meat into fine crumbles with a spatula.
  2. Drain excess fat and water, if needed. Once meat is thoroughly cooked, add 1 egg or 1/4-cup cholesterol-free egg product, stirring to combine as eggs are cooking.
  3. Serve in a flour tortilla.
