Isn't the Phosphorus amount too high for Dialysis patients? Dietitian comment: A typical low phosphorus diet has 1000 mg/day or around 300 per meal and 100 left for snacks. This recipe has only 154 mg phosphorus which is well within the dietary goal for phosphorus. Enjoy!

Made 12 instead of 8. Found them quite flavorful and satisfying. This will be a great easy meal for my mom when she's alone. She has limited use of her hands so the microwave is her only option. I will make this again.

The egg muffins were easy to make and were a nice change of pace for breakfast. I fixed eight muffins as directed. Then I froze the ones I wasn't going to use for a couple of days. I thawed them out then drained the moisture that was excess. I enjoyed them plain and topped with hot sauce. Very good change of pace.
