Recipe submitted by DaVita renal dietitian Angela from Tennessee.

Portions: 1     Serving size: 1

  • 2 slices whole wheat bread
  • 4 tablespoons egg whites liquid, divided
  • 1 ounce cream cheese
  • 2 tablespoons unsweetened applesauce
  • cinnamon to taste

    1. Preheat a non-stick skillet on medium-high heat.
    2. In a bowl, put 2 tablespoons of egg whites, and then add one slice of bread. Be sure to  get egg only on one side of the bread. Let egg soak into bread.
    3. Place bread egg side down in skillet.
    4. Add cream cheese and applesauce to bread in the pan and sprinkle with cinnamon.
    5. Repeat step 2 with the other slice of bread and place it on top of the slice in the pan, egg side up
    6. When bottom of the first bread slice is browned, flip it over and brown the other side.
    7. Remove to plate and top with the syrup of your choice.

Helpful hints

  • One egg yolk contains 66 mg phosphorus. Angela recommends using only the egg white so you can use whole wheat bread to increase fiber and still keep phosphorus low. One slice of white bread contains 25 mg phosphorus; one slice whole wheat bread contains 57 mg phosphorus.

French Toast with Cream Cheese and Applesauce Filling

texan99 says:

I'm stage 3 CKD and the cause of the failure was too much calcium, so I am off all calcium, no cream cheese, I was told my calcium is good right now (9.5 calcium, serum) in 3-25-2014) but I don't want it to shoot up if I start using things with calcium in them. I wondered about using white bread and the whole egg with rice milk (which I make) to make the french toast and eat with syrup on it, would this be alright? Thanks. Dietitian comment: Yes, especially with homemade rice milk[INVALID]you know there are no calcium additives.

made this today and it was delicious! Used whole wheat bread and 1 full egg. Also added about a 1/4 cup of non-dairy creamer to the egg. This made two servings.

What would you serve with this? That is a suggestion I would have is to offer an idea of what to serve these recipes with to make them a meal. Dietitian comment: I think some fresh berries and a beverage like coffee or cranberry juice would make this meal complete. Thanks for the suggestion!
