Chicken Fajitas

This Mexican classic adds some flavor to your table when you're eating a kidney-friendly diet. Chicken Fajitas feature exciting flavors such as cilantro, cumin and peppers all rolled into an easy-to-eat tortilla.

Portions: 4     Serving size: 2 fajitas


  • 8 flour tortillas, 6" size
  • 2 tablespoons canola oil
  • 12 ounces boneless chicken breasts
  • 1/4 teaspoon black pepper
  • 2 teaspoons chili powder
  • 1/2 teaspoons cumin
  • 2 tablespoons lemon juice
  • 1/4 cup  green pepper, chopped
  • 1/4 cup  red pepper, chopped
  • 1/2 cup  onion, chopped
  • 1/2 cup  cilantro, chopped


  1. Preheat oven to 300° F. Wrap tortillas in foil; heat in oven for 10 minutes.
  2. Cut chicken breasts into 1" strips.
  3. Place oil in nonstick frying pan over medium heat; add chicken, seasonings and lemon juice. Cook for 3 to 5 minutes.
  4. Add peppers and onion to frying pan; cook for 3 to 5 minutes more or until chicken is no longer pink and juice run clear. Add cilantro to chicken mixture.
  5. Divide chicken mixture between tortillas; fold tortillas over.

Robyn4254 I have found if you can find FAJITA size flour tortillas, they are slightly smaller, and Sodium ranges from 134 to about 180, depending on the brand. I even recently found them at my local Wal-Mart...they were 180. Also, Low Carb from Mission at Target stores with a grocery, about 8 in a package, are lower sodium as well. because MAKING them is an ALL DAY THING...and who has time for that ???! Another alternative, that I LOVE...put this in a Lettuce leaf...any kind...really refreshes the whole experience.

Dietitian comment: Unfortunately most commercially prepared flour tortillas now contain baking powder, and some have salt in addition. This really drives up the sodium content. This was not the case when the recipe was created years ago. Just made this last night for my family. It was delicious!! best meal I have made from this site so far. The kids even liked it. We also decided to add corn to it and we cut back on the spicy seasonings for the kiddos. defiantly saving this one to my favs.

Since I am on a kidney-friendly diet now, I tried these tonight and they were really good, I didn't have fresh cilantro so I put in about a 1/4 tsp of powdered, added a little Mrs.Dash also.I will definetly try these again!!<3<3<3

Why can't this be for CKD non -dialysis? Moderator comment: You are correct--it can be for CKD non-dialysis. Simply adjust the chicken portion if you need a lower protein meal. I have changed the recipe to reflect this.
