Chicken Spiedies

Originally from Europe, the “spiedie,” (rhymes with speedy) is first cousin to the kebab—deliciously marinated meat cooked on a skewer. Jennifer from Wisconsin offers this tasty, kidney-friendly version of Chicken Spiedies, instead of the more traditional lamb or beef.

Portions: 4     Serving size: 3 ounces grilled chicken


  • 1/2 cup olive oil
  • 1/2 cup red wine vinegar
  • 1 red onion, diced  large
  • 1 clove garlic
  • 1 teaspoon black pepper
  • 1 teaspoon ground oregano
  • 1 teaspoon paprika
  • 1 pound boneless, skinless chicken


  1. Blend olive oil, vinegar, onion, garlic and spices in a blender or food processor to make the marinade.
  2. Cut chicken into 1-1/2" cubes and place into a zip-top bag. Pour marinade over chicken and seal bag.
  3. Marinate overnight in the refrigerator.
  4. Place cubed chicken on skewers. Discard remaining marinade.
  5. Grill over medium heat for 10 to 12 minutes, turning as needed, until meat is cooked through.

  • Try this recipe with a combination of chicken breast and thigh meat, or substitute chicken with beef, pork or lamb, if desired.
  • Food safety guidelines recommend cooking chicken to an internal temperature of 180° F.

Having lived in Binghamton NY for a while (the spiedie capitol of the world)I can say this doesn't taste much like a spiedie, but is yummy in its own right. I halved the onion and still found it overpowering - might try 1/4 next time. Leftovers were great on salad the next day.
