Honey Mustard Grilled Chicken

Portions: 4     Serving size: 1 chicken breast (3 ounces)

Ingredients

  • 1/3 cup mayonnaise
  • 1-1/2 tablespoons deli-style mustard
  • 1 tablespoon honey
  • 1 teaspoon apple cider vinegar
  • 2 green onions, chopped
  • 1 pound boneless, skinless chicken breasts

Preparation

  1. In a small bowl, combine mayonnaise, mustard, honey, vinegar and green onions to make a sauce. Reserve 1/4 cup to serve with cooked chicken.
  2. Grill 1 pound boneless, skinless chicken breasts over medium heat.  Brush with honey mustard sauce and turn several times until chicken is cooked through.
  3. Remove from grill and serve with reserved honey mustard sauce.

I pan fried this and it was delicious. Every time I turned it, I added sauce to it.

I was skeptical but this was pretty good. It doesn't impart a ton of flavor to the chicken, but the reserved sauce is good over rice. Maybe if you flatten the breasts, cut them in half, or use another part of the chicken you can get a better sauce to meat ratio.
