Mr. P’s Curried Turkey with Rice

Serving size: 1-3/4 cups
Ingredients
*Spice substitute: Combine 1/2 teaspoon cardamom, 1/2 teaspoon cinnamon, 1/4 teaspoon black pepper, 1/4 teaspoon nutmeg, 1/4 teaspoon coriander and 1/4 teaspoon cloves.
Preparation
Heat a 2-quart heavy saucepan over medium heat.
Add butter and melt, then add garam masala (or spice substitute*)
Cook for 1 or 2 minutes until spices become fragrant.
Add the diced onion and sauté until soft and golden.
Add the turkey, raisins and apple to the pan and sauté for 5 minutes, stirring occasionally.
Add the rice and stir.
Add the chicken stock, bring to boil and cover.
Cook on medium-low heat until rice has absorbed all of the liquid, about 20 minutes.
Add the peas during the last few minutes to heat through, then toss and serve.
