High Protein Rice Crispy Treats

Ingredients
- 7 tablespoons butter
- 40 large marshmallows
- protein powder to equal 160 grams protein (see chart below)
- 6 cups rice crispy cereal
Preparation
- Melt butter in a large pot and add marshmallows. Stir constantly until marshmallows are completely melted.
- Remove pot from heat and gradually add protein powder. Mix until smooth. Add rice crispy cereal and mix until coated.
- Pour onto a greased 13” x 9” x 2” baking pan or cookie sheet and press down.
- Cool and cut into 12 bars, 3” x 4” each.
Microwave preparation
- In a large glass mixing bowl microwave butter and marshmallows for 2 minutes on high power. Stir to combine ingredients. Microwave 1-1/2 to 2 minutes longer.
- Add protein powder and stir until smooth. Add rice crispy cereal and stir until well coated.
- Pour onto a greased 13” x 9” x 2” baking pan or cookie sheet and press down.
- Cool and cut into 12 bars, 3” x 4” each.

Helpful Hints
- For CKD non-dialysis on a lower protein diet, omit the protein for a low-protein snack.
- After protein powder is added, mix rice crispy cereal in as soon as possible because the protein powder will start to harden if allowed to cool.
- Protein powders vary in the amount of protein per serving. The chart below lists some popular lower phosphorus powders and the amount to use in this recipe. Ask your dietitian for help if you use a different brand of protein powder.

I did have a hard time mixing in the protein powder though:) I think the finished product was great but it came out a bit chewy. I'm wondering if we can alter it some way? Let me know if anyone has ideas.

It was easy and with the addition of protein powder, a nice choice for the patients to try at home. The patients (and staff) loved the recipe! I found if you wear plastic gloves and mix everything together by hand it is really quick and easy.

I loved the idea, so I tried this recipe and shared the bars as samples to the patients at my clinic. They turned out tasty--everyone said they like them. The only problem was that it is a little challenging to stir in all the protein powder. The mixture became quite stiff. so be sure to be prepared to use your elbow grease. But the finished product was worth it!
