Bev's Raw Apple Cake

| Ingredients |
Cake
- non-stick cooking spray
- 2 eggs
- 3/4 cup oil
- 2 cups sugar
- 2 teaspoons vanilla
- 4 cups raw apples, peeled and chopped
- 2 cups flour
- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- 1 cup chopped pecans
Ice Cream
- 1 8-ounce package cream cheese, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla

| Preparation |
- Preheat oven to 350 degrees F. Spray 9" x 13" baking pan with non-stick cooking spray.
- Mix together: eggs, oil, sugar and vanilla. Then stir in apples.
- In a separate bowl, stir together: flour, cinnamon, baking soda and pecans.
- Add dry mixture to apple mixture and mix together.
- Put into baking pan and bake in oven for one hour.
- Allow to cool.
- For icing: Using a mixer, mix together cream cheese, powdered sugar and vanilla.
- Spread icing over cool cake.
