Apple Cinnamon Farfel Kugel

Serving size: 4" x 2.7" piece
Ingredients
  • 1 cup hot water
  • 1 cup Matzo farfel (available in the Passover-product aisle in your supermarket)
  • 1/4 cup sugar
  • 2 large apples peeled, cored and shredded
  • 2 teaspoons ground cinnamon
  • 3 egg whites, stiffly beaten
  • 1/2 cup pineapple chunks, drained
Preparation
  1. Preheat oven to 375° F.
  2. Spray an 8" x 8" baking dish with nonstick cooking spray.
  3. In a large bowl, combine the hot water and farfel.
  4. Add the sugar, apples and cinnamon.
  5. Fold in the egg whites.
  6. Add pineapple chunks and stir.
  7. Pour mixture into the prepared baking dish and dust the top with more cinnamon.
  8. Bake at 375° F for 45 minutes.
