Old Fashioned Applekuchen

Recipe created by Mary’s grandmother and submitted by DaVita dietitian Mary from Missouri.
Yield: 18 pieces
Serving size: 2-1/2” x 2” piece
Ingredients
- 2 cups sugar
- 1 cup oil
- 1 teaspoon vanilla
- 2 beaten eggs
- 2 cups flour
- 1 teaspoon baking soda
- 3 teaspoon cinnamon
- 1 teaspoon salt
- 4 cups fresh peeled and sliced apples
Preparation
- Blend all ingredients in order given, apples last and blended least.
- Grease a 12” x 7-1/2” glass baking pan or 2 smaller pans.
- Pour in mixture and bake at 350° F for approximately 1 hour. Cake will be golden. Do not over cook, the cake should be moist.
