Lemon Squares

| Ingredients for crust |
- 1/4 cup confectioner's (powdered) sugar
- 1/8 teaspoon salt
- 1 cup all-purpose flour
- 1/2 cup unsalted butter

| Preparation for crust |
- Mix together all ingredients in order listed.
- Pour into ungreased 8" square pan.
- Bake at 350 degrees for 15 minutes.
- Remove from oven and spread with the following filling mixture.

Ingredients for filling
|
- 1 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 2 eggs slightly beaten
- 2 tablespoons lemon juice
- 1 tablespoon lemon rind (grated)

Preparation for filling
|
- Mix together all ingredients in order listed.
- Pour into 8" square pan you just removed from oven.
- Spread over top of crust.
- Return to oven and bake 20 minutes longer at 350 degrees.
- Remove from oven and cool.

Ingredients for icing
|
- 2 tablespoons lemon juice
- 3/4 cups confectioner's (powdered) sugar
- 1 tablespoon unsalted butter (softened)

| Preparation for icing |
- Mix together all ingredients in order listed.
- When crust and filling layers are completely cool, spread icing over the top.
- Refrigerate. (These squares freeze well.)
