This kidney-friendly version of ambrosia has just the right combination- sweet, creamy and fruity- and made with low potassium fruits to fit the dialysis diet.

Portions: 12     Serving size: 1/2 cup


  • 1 cup sour cream 
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 15 ounces canned pineapple chunks
  • 15 ounces canned sliced peaches
  • 1-1/2 cup maraschino cherries
  • 3 cups miniature marshmallows
  • 12 lettuce leaves


  1. Mix sour cream, powdered sugar, and vanilla in a bowl.
  2. Drain pineapple, peaches and cherries. Add fruit and marshmallows to sour cream mixture. Gently mix.
  3. Let chill in refrigerator for at least 1 hour.
  4. If desired, serve on a lettuce leaf.

Helpful hints

  • Nutrient analysis based on drained fruit canned in syrup.
  • To lower carbohydrate count, patients with diabetes may substitute fruit packed in juice and use low calorie sweetener. (126 calories, 24 grams carbohydrate per serving)

How can this 1/2 c of this wonderful tasting treat be ok for a diabetic? Real sugar, marshmallows, and powdered sugar? Even if you were to use a sugar-free sugar, it still calls for marshmallows and powdered sugar. Moderator comment: The American Dietetic Associaton's position is that it's the total amount of carbohydrate eaten that's important, not the source (sugar vs. starch). If you follow the helpful hints for lowering carbs, 1/2 cup provides 24 grams or 1-1/2 carbohydrate choices which is acceptable for a diabetic diet.For kidney patients who are having difficulty eating, this recipe will help them meet their carb goals more easily.
