Angel Cookies

DaVita patient Wanda shares her recipe for Angel Cookies, a treat that's oh-so heavenly and light. With only 4 ingredients, this easy dessert makes a great treat for those with diabetes in addition to being kidney-friendly.

Ingredients

  • 1 box angel food cake mix
  • 1 teaspoon vanilla extract
  • 1/2 cup Black Cherry diet soda
  • 14 ounces dried, sweetened coconut flakes

Preparation

  1. Preheat oven to 350° F.
  2. In a mixing bowl mix the cake mix, vanilla and soda. If too stiff or not completely mixed add more soda a spoonful at a time just until mixed.
  3. Fold in the coconut.
  4. Place parchment paper on a cookie sheet. Drop a spoonful of the cookie mixture on sheet placing 2″ apart. Bake for 10 minutes until light brown on bottom.
  5. Remove cookies from baking sheet and cool on a cooling rack.

Helpful hints

  • Use a new sheet of parchment paper for each new set of cookies. 
  • Place in zip top bag or sealed container to store. 
  • Can use other soda flavors: Cherry, Strawberry, Cranberry, etc. Avoid sodas with phosphate additives.

Was hoping for a moderator comment but never got one. Made with 100% apple juice-threw them right in the trash. Moderator comment: The recipe calls for carbonated beverage. The carbonation may be required. This is my guess as to why the recipe did not work. Has anyone else tried it with the soda?

ANGEL COOKIES Does not indicate size of spoonful. Nutrients does not list grams of sugar per serving. Moderator comment: The total sugar is 4 grams per serving. An exact spoon measure was not provided, but I suggest using a teaspoon from your flatware set or you can use a measured teaspoon.
