Blueberry Buckle

Blueberry Buckle blends the sweets tastes of low potassium blueberry and pineapple, creating a kidney-friendly treat. A few simple modifications make it a great choice for a diabetes or diabetes dialysis diet.

Portions: 15     Serving size: 2/3 cup


  • 2 boxes grape-flavored gelatin mix (3 ounce boxes) 
  • 2 cups hot water
  • 20 ounces canned crushed pineapple
  • 21 ounces blueberry pie filling
  • 8 ounces cream cheese
  • 1/2 cup granulated sugar
  • 1 cup sour cream
  • 1 teaspoon vanilla extract


  1. Combine gelatin and hot water, stirring until dissolved.
  2. Drain pineapple and stir into blueberry pie filling. Pour mixture into a gelatin mold and chill in refrigerator until firm.
  3. Cream together cream cheese and sugar. Beat in sour cream and vanilla.
  4. When gelatin is firm, invert on serving plate.
  5. Spread cream cheese mixture across the top of gelatin.
  6. Chill until ready to serve.

Helpful hints

  • Buy two 3-ounce packesges of gelatin mix.
  • If a gelatin mold is not available, a 9 "x 13" pan can be used instead. Spread cream cheese mixture on top of congealed gelatin.
  • For a diabetes-friendly version, use sugar-free gelatin, reduced sugar pie filling and Splenda® granular sweetener instead of sugar. Carbohydrate is reduced to 22 grams; count as 1-1/2 carbohydrate choices.

I think a part of the directions are missing. What do you do with the blueberry mixture? Dietitian comment: See step #2. After adding pineapple to the blueberry filling you add it to the gelatin and refrigerate to congeal.

Couldn't figure out why this is called a buckle since a buckle is more like a cobbler but I will give it 5 stars because it is easy and extremely yummy!!!
