Cheese Tarts

Tasty desserts and sweet snacks are a great way for people on dialysis to get extra calories when they don't have an appetite. This recipe for Cheese Tarts by renal dietitian, Arlene from California, features creamy cheese filling topped with the low potassium fruit pie filling of your choice.

Portions: 24     Serving size: 1 tart


  • 8 ounces cream cheese
  • 2 eggs
  • 3/4 cup sugar
  • 2 teaspoons vanilla extract
  • 2 dozen paper cupcake liners
  • 2 dozen vanilla wafers
  • 1-1/2 cups apple pie filling


  1. Set out cream cheese to soften for 1 hour before making tarts.
  2. Preheat oven to 350° F.
  3. Blend cream cheese, eggs, sugar and vanilla extract in a bowl and beat until smooth.
  4. Place cupcake liners in muffin pan. Put one vanilla wafer into each cupcake liner.
  5. Pour cream cheese mixture over vanilla wafer, about 3/4 full.
  6. Bake for 10 minutes. Remove tarts from oven and cool in the refrigerator.
  7. Immediately before serving top each tart with 1-1/2 tablespoons of fruit pie filling per tart.

Quick and easy, however I did not yield 24, I ended up with 17, and they were filled 2/3 full with batter. We used cherry pie filling and it was yummy.
