Cherry Coffee Cake

DaVita renal dietitians from Minnesota share some of their favorite regional recipes that have been modified for the dialysis diet. By limiting phosphorus,potassium and sodium,dialysis patients can enjoy this recipe for delicious Cherry Coffee Cake.

Recipe submitted by DaVita renal dietitians Jean and Madonna from Minnesota.

Portions: 24     Serving size: 2" x 3" piece


  • 1/2 cup unsalted butter
  • 2 eggs
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 teaspoon vanilla
  • 2 cups all-purpose white flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 20 ounces cherry pie filling


  1. Preheat oven to 350° F. Set butter out at room temperature to soften.
  2. Using a mixer, cream butter, eggs, sugar, sour cream and vanilla.
  3. In separate bowl combine flour, baking powder and baking soda.
  4. Add dry ingredients to creamed butter mixture and mix well. Pour batter into a greased 9" x 13" baking pan.
  5. Evenly disperse cherry pie filling over batter.
  6. Bake for 40 minutes until golden brown.

Carbohydrate choices


Helpful hints

  • Substitute blueberry or raspberry pie filling instead of cherry if desired.
  • Cut into 12 servings instead of 24 if you need extra calories.
  • Lower sugar options for those with diabetes include using sugar substitute for baking instead of sugar and using low-sugar cherry filling.

Just curious.. I looked up a cherry pie filling recipe and inputed it into my Master Cook and came out with a very high potassium amount (709 mg) per 32 ounce (1 quart), why is the canned so much lower. Dietitian comment: My program includes a generic cherry pie filling with 954 mg potassium and Solo brand with 929 mg for 32 ounces. The recipe only calls for 20 ounces (580-596 mg)which is divided between 24 portions, approximately 25 mg potassium per serving.
