Easy Low Phosphorus Fudge

Portions: 18     Serving size: one 3" x 1-1/2" piece

Ingredients

  • 2/3 cup liquid nondairy creamer
  • 1-2/3 cups sugar
  • 2 cups minature marshmallows
  • 1-1/2 cups semi-sweet chocolate chips
  • 1 teaspoon vanilla 

Preparation

  1. Combine nondairy creamer and sugar in a large heavy saucepan.  Bring to a boil; reduce heat to medium. Stir constantly and continue a rolling boil for 5 minutes.
  2. Remove pan from heat and add marshmallows, chocolate chips and vanilla. Stir until marshmallows are melted.
  3. Quickly pour into a greased 9" square pan. Cool; cut into 3" x 1-1/2" pieces making 18 pieces.

Helpful hints

  • Grease pan with butter or margarine before starting.
  • Let fudge cool completely before cutting
  • Nondairy creamers differ in composition and name around the country.  Ask your dietitian to recommend the brand lowest in potassium and phosphorus.
  • For diabetics, cut fudge into 1-1/2" x 1-1/2" pieces and count as one Carbohydrate choice.

I made this for a patient holiday demo and it was very well received! Nice chocolate taste. Even the teammates who sampled it liked it and commented that if I didn't say anything they wouldn't know it wasn't a regular recipe. However, I doubled the recipe to make sure I had enough and it was very soft. Is it normally like that or should I have adjusted the ingredients somehow?

This fudge is wonderful.One suggestion I have is to melt the chocolate separately. That way it makes stirring much easier. If you have a few small lumps of chocolate when your finished, it's fine it adds a little texture.make some and enjoy. Before making this fudge, I didn't have chocolate in two years. this was a great treat. I put some of the pieces in the freezer wrapped in foil for later.

This seems extremely high in sugar for a diabetic, sugar, marshmallows, and then semi-sweet chocolate chips to boot? Wouldn't this raise the blood sugar level for a diabetic? Moderator comment: The key is portion control. The helpful hints recommend a 1-1/2 x 1-1/2 inch piece for people with diabetes to provide 16 grams of carbohydrate. According to the American Diabetes Association the total amount of carbohydrate consumed is more important than the carbohydrate source.

Please correct me if I'm wrong, but doesn't this make 9 3X3 portions, not 18 ? Moderator response, Good catch--thanks! Actually the portion size should be 3 inches by 1-1/2 inches instead of 3 inches by 3 inches. For diabetics, adjust the portions to 1-1/2 by 1-1/2 inches. We did a food photo using this recipe and changed the portion at that time to make the servings larger(and yes, still kidney-friendly!), but got the portion wrong.
