I made this today and served it for desert. Family couldn't believe it was one of my "Kidney" recipes. They loved it and said I should make it for Thanks- giving. To save on calories I omitted the crust completely. Just mixed the ingredients and poured into a pie plate and baked. Used Splenda for sugar...1/2 white & 1/2 brown. Sprinkled the top with a little more pumpkin pie spice. This is really good, believe me.

I haven't personally prepared this dessert or tasted it but two of my patients have and said it was very easy to prepare and delicious!

Substitute Splenda for sugar and use sugar-free Cool Whip for diabetic variety.

Prepared for a pre-Thanksgiving celebration, and the patients loved it. Made in 13x9" pans-1-1/2x recipe. Cut into squares, served in small muffins papers.
