Lemon Pound Cake

Today, pound cake has many creative variations, and renal dietitian Krista from Maryland modernized her recipe and made it kidney-friendly with zippy lemon extract. The smell of lemon and butter baking in this cake will make the fussiest British cook say, “Blimey, that’s delicious!”

Portions: 16     Serving size: 1 slice

Ingredients

    • 1–1/2 cups butter
    • 3 cups granulated sugar
    • 5 large eggs
    • 3 cups sifted all-purpose white flour
    • 1 cup  low fat milk, lukewarm
    • 1 teaspoon vanilla extract
    • 2 teaspoons lemon extract

Preparation

    1. Preheat oven to 325°F.
    2. Grease and flour a tube pan.
    3. Using a mixer, cream butter and sugar together.
    4. Add eggs, one at a time, beating after each egg is added.
    5. Fold in flour and combined milk and extracts.
    6. Pour batter into a greased tube pan and bake for 1 hour and 20 minutes.

Helpful hints

    •  Use a larger capacity tube or bundt pan.
    • This recipe is not recommended for diabetics due to the high carbohydrate content.

I made this cake, but I had to cook it 1hr.30mins. I have an electric oven. So I don't know if that is the reason. I thought the taste was good. My husband also likes it because it was lemon. I was surprised that it acutally raised, without any baking powder or baking soda.
