Nondairy Ice Crème Sandwiches

Not everyone can tolerate ice cream, but thanks to DaVita administrative assistant Mechelle from South Carolina, they can enjoy Nondairy Ice Crème Sandwiches. Her kidney-friendly recipe is a cinch to make.

Portions: 10     Serving size: 1 sandwich

Ingredients

    • 10 chocolate graham crackers (2-1/2" x 5")
    • 20 tablespoons Cool Whip® frozen dessert topping, thawed

Preparation

    1. Break graham crackers into squares (2-1/2").
    2. Spread 2 tablespoons Cool Whip® topping on 10 of the graham cracker halves.
    3. Top with the remaining 10 graham cracker halves to make sandwiches.
    4. Place sandwiches on a cookie sheet and freeze for 2 hours before serving.

Helpful hints

    • This recipe can be made in batches and kept frozen for a yummy snack later.  
    • Wrap each sandwich in plastic wrap and place in a freezer bag.

Very easy and tasty. Used regular (not chocolate) graham crackers even though it is less like regular ice cream sandwiches.

I made this for our patients for a Hawaiian Days celebration. Talk about easy and well received!! Quite a few patients told me that made more for themselves the following weekend!!

These are fast and easy! I served them once to a meeting for family caregivers at my clinic. They loved this idea and several told me they would make them at home. I am also planning to make these again this summer for one of of celebration days here at my clinic.
