Pineapple Angel Cake

The delightfully refreshing flavor of pineapple combines with light angel food cake in this kidney-friendly recipe for Pineapple Angel Cake. DaVita renal dietitian, Kim from Kentucky, says her easy-to-make recipe makes a yummy dessert or snack.

Portions: 12     Serving size: 1/12 cake

Ingredients

    • 1 box angel food cake mix
    • 20 ounces canned crushed pineapple, juice pack
    • 8 ounces Cool Whip® frozen dessert topping, thawed 

Preparation

    1. Preheat oven to 350° F.
    2. Blend dry cake mix and entire can of undrained pineapple with a mixer until well blended and fluffy. 
    3. Pour mixture into an ungreased 9" x 13" cake pan. Bake 25 to 30 minutes until lightly brown on top.
    4. Cool completely.
    5. Frost with non-dairy whipped topping. Store in the refrigerator.

Helpful hints

  • For higher calories use pineapple packed in heavy syrup.

Have been making this cake for years. Had no idea that it would be kidney friendly! Hooray! (Is there a way we can submit a recipe that we would like to learn if it is kidney friendly? Thanks!) I just recently learned about this cake. My sister made this cake for my Partner and I to take to a friend's cookout and there were alot of people that raved about it! I do agree that this cake is very, very good! I am also glad it is kidney friendly!
