Poor Man's Cake

Suitable for CKD and dialysis food plans, the cake calls for just a half cup of cocoa to give it a rich color and chocolaty taste. Kathy says that Michelle gave her the recipe because she wanted to help patients maintain good phosphorus control while enjoying their chocolate.

Portions: 24     Serving size: 2” x 2” square

Ingredients

  • 3 cups all-purpose white flour
  • 2 cups sugar
  • 1/2 cup cocoa
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 2 tablespoons vinegar
  • 3/4 cup vegetable oil
  • 2 teaspoons vanilla
  • 2 cups cold water

Preparation

  1. Preheat oven to 350°F.
  2. Mix the first 5 ingredients in an ungreased 9” x 13” baking pan.
  3. Make 3 holes in the dry ingredients.
  4. Pour 2 tablespoons vinegar in one hole.
  5. Pour 3/4 cup oil in second hole.
  6. Pour 2 teaspoons vanilla in the third hole.
  7. Add 2 cups of cold water and mix.
  8. Bake for 30 to 45 minutes until a toothpick inserted into the center comes out clean.

Helpful hints

  • Great for cupcakes too! Pour 1/3 cup batter into each regular size cupcake liner to make 24 cupcakes.
  • Cocoa processed with alkali, also known as Dutch chocolate, is much higher in potassium than natural cocoa powder.

Made this cake into cupcakes for the unit. The patients loved them, and were delighted to have something chocolate. Frosted them with cream cheese/confectioners sugar frosting used for the other davita.com pineapple cake recipe.

Such a great cake. My daughters love it.I was afraid it would be dry but not at all. Already gave out this recipe to 2 of my friends and the kids really like it. The kids ages range from 6 to 18 and they all enjoyed it
