Vanilla Lasagna

Serving size: one 3"x 2-1/2" piece
Ingredients
- one small package sugar-free vanilla pudding mix
- two cups unenriched rice milk
- one box of honey graham crackers
- two 8-ounce containers fat-free Cool Whip® frozen dessert topping, thawed
- one cup mini chocolate chip morsels
Preparation
- Make pudding according to package directions, substituting rice milk for dairy milk.
- Gently cut one container of fat-free Cool Whip into pudding mixture.
- Layer the bottom of a 9" x 13" pan with graham crackers.
- Spread half of pudding/Cool Whip mixture on top of graham crackers.
- Put another layer of graham crackers on top of the pudding mixture.
- Spread the other half of pudding/Cool Whip mixture on top of graham crackers.
- Put last layer of graham crackers on top of pudding mixture.
- Use last tub of Cool Whip as icing on top of graham crackers.
- Sprinkle one cup mini chocolate chips over Cool Whip.
- Place in fridge overnight.

Helpful hints
- This recipe is best if prepared the night before you are going to serve it.
- Reduce portion to 1/2 the size recommended if you have diabetes and count as 1-1/2 carbohydrate choices.

I made this recipe w/both rice milk & almond milk. It set up fine for me. I put it in the fridge as soon as it was mixed up. Many of my patients in my clinic liked it, as did some of my coworkers!!! I also thought it turned out well & will make it again sometime with fresh fruit on top like strawberries & blueberries, maybe for the 4th of July.

We tried this with regular instant pudding mix and rice dream, and had disappointing results. The pudding did not thicken-- it remained very liquid, so our "lasagne" was really soupy. Moderator's comment: Unfortunately instant pudding does not work with rice milk and some of the other milk substitutes. If you try it again stike to the pudding that requires cooking. I had a similar experience when I was developing recipes using pudding mix.
