Turkey, Wild Rice and Mushroom Soup and Beef Stew with Carrots and Mushrooms by Sarah from Kansas

Soups and stew recipes are a staple of any cook’s recipe file. Now DaVita renal dietitian Sarah from Kansas makes it easy to prepare them for your friends and family who are following the renal diet. 

Sarah’s kidney-friendly Turkey, Wild Rice and Mushroom Soup is anything but mundane, with a mouth-watering blend of wild rice, turkey, veggies and plenty of seasoning. If stew is what your family prefers, you can’t go wrong with Sarah’s Beef Stew with Carrots and Mushrooms. This hearty entrée relies on beef, Shitake mushrooms and red wine for its full-bodied flavor. 

Sarah knows the importance of good-tasting, renal-friendly meals in the life of someone with chronic kidney disease. And she chose her field of work because of her desire to educate and inspire kidney patients to improve their health. 

A native of Nebraska, Sarah attended the University of Nebraska at Lincoln. She says that her desire to truly connect with her patients led her into the renal field. “I had an interest in following patients for extended periods of time,” she explains, “so that I could build relationships and help promote good health.” 

After 2 years working with DaVita, she finds that her goal – and the challenge -- of her work are one and the same. “The most challenging aspect of my job is inspiring patients to take accountability for their health,” relates Sarah. 

Sarah’s approach is “friendly and fun.” And she believes she makes a difference in patient’s lives by providing “encouragement and thorough education of the renal diet.” 

Each day at DaVita, Sarah enjoys the conversations and activities she shares with her patients. And when patients get inspired, it fuels Sarah’s desire to continue her important work. “When patients are excited about improving lab outcomes and  when they ask questions about their diet, illustrating that they are interested in learning more, it’s the most rewarding part of my job!” exclaims Sarah. 

When her patients ask how they can improve their health, the single more important piece of advice that Sarah shares is “everything in moderation.” That’s a credo that she believes kidney patients can live by. 

Many activities support patient success at DaVita. “Re-draw updates are helpful; patients want to see that the conversations we’ve had together and their hard work have paid off,” explains Sarah. “Updating them on how their labs look following re-draw is also an opportunity to review what they have done differently to help improve their outcomes, or to suggest a need for further improvement.” 

Sarah works at the DaVita center in Olathe, Kansas. “I think it’s special, because it’s a clinic that’s always growing! And I like the location, because we see patients from small towns and a large city,”  expains Sarah. 

When asked what she enjoys about working for DaVita, Sarah replies, “I like the teammate interactions and the opportunity for education.” 

Among the surprises Sarah’s experienced at DaVita has been the value of team work. “I’ve learned what a difference it makes to have a good team! I’m only as effective and as good at my job as my teammates are at their jobs!” says Sarah.
