Italian Style Shredded Beef

Old-fashioned, slow-simmered comfort food is a great way to describe this recipe for Italian Style Shredded Beef, by DaVita renal dietitian, Connie from Virginia. Economical rump roast is rendered melt-in-your-mouth tender by slow cooking in a crock pot. Onion, bay leaf, garlic and red wine robustly flavor the meat and gravy-juices. Serve hot on hard rolls, or pair with veggie sides for a complete, dialysis-friendly meal.

Serving Size: 3 ounces beef
Ingredients
- 1/2 cup onion, chopped
- 2 cloves garlic, crushed
- 1 tablespoon Italian herb seasoning
- 1 bay leaf
- 1 teaspoon parsley, crushed
- 1/2 teaspoon pepper
- 1/4 teaspoon salt
- 2 tablespoons olive oil
- 1/2 cup red wine
- 1/3 cup vinegar
- 2 to 3 cups water
- 2 pounds rump roast
- 8 hard rolls, 3-1/2” diameter
Preparation
- Combine all ingredients except roast in a crock pot and mix well.
- Add roast to crock pot.
- Cook on high-heat setting for 4 to 5 hours, until fork-tender.
- Remove roast from crock pot. Shred with two forks then return meat to crock pot liquid to keep warm until ready to serve.
- Serve on hard rolls.

Helpful Hints
- Substitute fresh onion and garlic with 1 teaspoon onion powder and 1 teaspoon garlic powder. Fresh gives a better flavor, however.
- Portion leftover Italian Style Shredded Beef into 3-ounce servings, store in freezer bags and freeze for a quick, easy meal at a later time.
