Zesty Chicken

Serving size: 1 breast

Ingredients

  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1/4 cup  green onion, chopped
  • Salt free herbs or spices to taste  (such as: rosemary, basil, oregano, garlic powder, pepper and paprika)
  • 1 large chicken breast

Preparation

  1. In measuring cup, whisk balsamic vinegar and olive oil. 
  2. Add green onion and herbs and whisk again to make marinade for chicken. 
  3. Pour marinade over chicken in leak-proof bowl or plastic storage bag. In the refrigerator, marinate from 30 minutes up to 24 hours. 
  4. Remove chicken from marinade and pan fry in medium-hot, non-stick or greased skillet for several minutes on each side until thoroughly cooked. (Using a thermometer, the internal temperature of the chicken breast should be 170 degrees.)

this is a nice receipe my husb is stage 4 renal predialysis and i am diabetic type 2no kidney prob yet. diet is great and can add or delete what we like too.
