Turkey and Beef Chili

Diet - Dialysis, Diabetes

Portions:  12       

Serving size:  3/4 cup chili over 3/4 cup white rice

Ingredients

  • 2 pounds ground turkey                               
  • 1 pound ground lean beef                           
  • 1 large onion, chopped                                                                               
  • 1/2  green pepper, chopped
  • 2 garlic cloves, minced                    
  • 1-1/2 tablespoons cumin seed or ground cumin
  • 1 teaspoon ground oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper                         
  • 1/2 teaspoon paprika  (optional)
  • 1 tablespoon all-purpose flour
  • 3 cups of boiling water
  • 1/4 cup chili powder
  • one 6-ounce can no salt added tomato paste
  • 9 cups cooked white rice

Preparation

  1. In a large skillet add turkey and beef. Sauté until brown.
  2. Add onion, green pepper and garlic to meat; stir.
  3. Add cumin, oregano, salt, pepper and paprika; stir.
  4. Sprinkle flour over mixture.
  5. Mix together the boiling water and chili powder. Stir into skillet.
  6. Cook slowly for 1 hour.
  7. Add tomato paste and stir well.
  8. Skim off any excess grease. Cook 30 minutes longer.
  9. Serve over hot white rice.

I made this exactly as the recipe stated, and it was really delicious! Could have eaten it as is, but we put it over elbow macaroni. I thought I would miss the beans, but really didn't. Highly recommend this chili.
