Turkey and Beef Chili

Serving size: 3/4 cup chili over 3/4 cup white rice
Ingredients
- 2 pounds ground turkey
- 1 pound ground lean beef
- 1 large onion, chopped
- 1/2 green pepper, chopped
- 2 garlic cloves, minced
- 1-1/2 tablespoons cumin seed or ground cumin
- 1 teaspoon ground oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika (optional)
- 1 tablespoon all-purpose flour
- 3 cups of boiling water
- 1/4 cup chili powder
- one 6-ounce can no salt added tomato paste
- 9 cups cooked white rice
Preparation
- In a large skillet add turkey and beef. Sauté until brown.
- Add onion, green pepper and garlic to meat; stir.
- Add cumin, oregano, salt, pepper and paprika; stir.
- Sprinkle flour over mixture.
- Mix together the boiling water and chili powder. Stir into skillet.
- Cook slowly for 1 hour.
- Add tomato paste and stir well.
- Skim off any excess grease. Cook 30 minutes longer.
- Serve over hot white rice.
