Roasted Chicken

Serving size: 3 ounces

Ingredients

  • 2 teaspoons olive oil
  • 1 whole chicken
  • 1/2 teaspoon Kosher salt
  • pepper to taste
  • 2 whole fresh garlic heads
  • 2 large sprigs fresh rosemary
  • 1 lime

Preparation

  1. Preheat oven to 375° F.
  2. Add olive oil to skillet and begin heating.
  3. Rinse chicken inside and out and pat dry.
  4. Sprinkle chicken with salt and pepper, inside and out.
  5. Place 1 whole garlic head and 2 sprigs of rosemary inside chicken.
  6. Add chicken to skillet and brown on all sides.
  7. After browning, squeeze the juice of the lime over chicken and place uncovered skillet with chicken into oven.
  8. During cooking, periodically spoon juices over chicken.
  9. Check after 1 hour and 30 minutes. To test for doneness, pierce chicken at thickest part of thigh; juices should be clear.
