Slow Cooker Breast with Carrots and Cranberry Gravy

Serving size: 2-1/2 ounces turkey, 1/3 cup carrots, 1/4 cup gravy

Ingredients

  • 18 ounces boneless, skinless turkey breast
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon chicken bouillon granules or powder
  • 1 cup cranberry sauce
  • 1/3 cup celery, diced
  • 1/4 cup onion, chopped
  • 2 cups carrot pieces

Preparation

  1. Place turkey breast in slow cooker and sprinkle with poultry seasoning and bouillon granules. 
  2. Spoon cranberry sauce on top; add celery, onion and carrots.
  3. Cover with lid, turn heat to high and slow cook for 4 hours.

Helpful hints

  • Whole turkey breast may be substituted for boneless turkey.
  • Spray slow cooker pot with nonstick cooking spray for easier cleanup.
  • Frozen onion and carrots may be used instead of fresh vegetables.
  • A very small portion of regular bouillon adds flavor.  Portion control helps keep sodium content within the limits of a low sodium diet.
  • Serve with noodles, rolls, margarine and fruit salad.

Loved it. Great flavor..I used larger chicken breasts and in turned out good. I fixed it for my daughter and grandson and they really liked it.

I notice it calls for chicken bouillon I though dialysis patients need to stay away from sodium, is this ok to use, please advise? Moderator comment: One serving from this recipe provides less than 200 mg sodium. Use of small amounts of higher sodium ingredients adds flavor. By limiting the amount, the recipe is still low in sodium and suitable for a kidney diet.

I made this turkey recipe last week after finding it in the DaVita magazine. Not only was it easy to put together but it was totally delicious. My grown children fought over who would finish it.
