Lively Lime Shrimp

Serving size: 5 medium shrimp

Ingredients

  • 3 tablespoons lime juice
  • 1 green onion, chopped
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon minced jalapeno chili
  • 1 tablespoon olive oil
  • 1/2 teaspoon minced garlic
  • 1/8 teaspoon salt
  • 20 medium shrimp, peeled and deveined
  • 2 tablespoons minced red bell pepper
  • 20 cucumber slices

Preparation

  1. For dressing, stir together lime juice, green onion, cilantro, jalapeno, oil, garlic and salt in a medium bowl.
  2. In a separate medium size bowl, toss shrimp with 2 tablespoons of the dressing to marinade.  Reserve remaining dressing.  Cover and refrigerate for 30 minutes.
  3. Heat broiler.  Remove shrimp from marinade and broil 3-inches from the heat source for 1-1/2 minutes per side or until opaque.
  4. Remove from broiler and immediately toss hot shrimp with reserved dressing and red bell pepper.  Cool to room temperature. 
  5. Arrange shrimp on cucumber slices and serve.
