Campfire Trout

DietType - CKD, Dialysis, Diabetes

Recipe submitted by DaVita dietitian Helen from Colorado.

Portions: 2

Serving size: 1 fillet

Ingredients

  • two 3-1/2 ounce trout fillets
  • Mrs. Dash® Garlic-Herb Salt-Free Herb Blend, to taste
  • 1 lemon, sliced
  • 2 green onions, sliced
  • 2 tablespoons celery, chopped
  • 1/4 cup carrots, julienne

Preparation

  1. Place fish in the center of a large piece of foil (heavy-duty foil works best for a campfire). Sprinkle with Mrs. Dash seasoning.
  2. Arrange lemon slices over fillets. Sprinkle with green onions, carrots and celery.
  3. Seal foil tightly. Place on rack over campfire coals or bake at 400° F for 10 to 15 minutes or until fish flakes easily with a fork. (Be careful opening packet as steam will escape.)
