Amazing Crab Cakes

Portions:  8

Serving size:  1 crab cake 

Ingredients 

  • 1/4 medium onion, finely chopped
  • 2 stalks celery, finely chopped
  • 1 egg, beaten
  • 2 cups crab meat (preferably fresh blue crab)
  • 1 tablespoon light mayonnaise
  • 1 teaspoon mustard
  • 1 cup bread crumbs (divided use)
  • 2 tablespoons canola oil 

Preparation 

  1. Sauté onion and celery until tender; set aside to cool.
  2. In a big mixing bowl combine the beaten egg, crab meat, mayonnaise, mustard and 1/2 cup bread crumbs with the sautéed onion and celery.
  3. Mix together and form into 8 cakes.
  4. Roll each cake in remaining bread crumbs. (Skip this step if you want less bread crumbs.)
  5. Pan fry until cakes are golden brown.

  • Fresh crab meat tastes the best, but if unavailable you can substitute canned crab meat.
