Fresh Herb Cranberry Stuffing

When it comes to staying on your dialysis diet, the holidays can be a trying time. Here's a tasty recipe from the DaVita renal dietitian team for kidney-friendly Fresh Herb Cranberry Stuffing.

Portions: 6     Serving size: 1/2 cup


    • 1/4 cup unsalted butter
    • 1/2 cup onion
    • 1/2 cup  celery
    • 8 slices white bread
    • 1/2 teaspoon black pepper
    • 2 teaspoons poultry seasoning
    • 1/2 tablespoon fresh parsley
    • 1/2 tablespoon fresh sage
    • 1/2 tablespoon fresh rosemary
    • 1/2 tablespoon fresh thyme
    • 1/2 cup dried cranberries, sweetened
    • 1/2 cup liquid low-cholesterol egg substitute
    • 1/4 cup giblet stock


  1. Chop onion and celery. Cut bread into 1/2-inch cubes. Chop fresh herbs.
  2. Melt butter in a nonstick frying pan. Sauté onion and celery. Remove from heat.
  3. Toss in cubed bread, pepper, poultry seasoning, fresh herbs and cranberries.
  4. Mix egg product and giblet stock.  Pour into bread mixture and mix lightly.
  5. Place the stuffing into the turkey body cavity and neck to cook.

Helpful hints

  • For best results use day-old bread.
  • If fresh herbs are unavailable substitute 1 teaspoon dried herbs.
  • If desired, bake stuffing separately in a baking dish sprayed with nonstick cooking spray at 350º F for 45 minutes.
  • If giblet stock is unavailable substitute lo- sodium chicken broth.

is there a recipe for no salt bread? Dietitian comment: Try the DaVita recipe for [INVALID]no Need to Knead Garlic Bread[INVALID]. It has only 55 mg sodium per serving.

Can this recipe be made with cornbread instead of the white bread ? Dietitian comment: If you use 6 1/2 ounces of cornbread instead of 8 slices white bread the potassium is 10 mg higher and phosphorus is 28 mg higher per serving. Fat is also higher. Other nutrients are about the same.
