Helpful hints

  • Potatoes are very high in potassium but you can remove part of the potassium by using the double cook method described in this recipe. This step is not necessary if you do not need to restrict potassium. Anne uses Idaho or white potatoes.
  • Look for Vidalia, Maui or Walla-Walla onions.
  • Choose a trans-fat free margarine such as SmartBalance®.
  • Pierogies are ubiquitous through Central and Eastern Europe and can be filled with meat, sauerkraut, and even prunes, although many fillings are not ideal for renal patients.
  • Always check with your renal dietitian regarding how often and how much you can include reduced potassium potatoes according to your potassium levels.
  • Remember to limit your dairy due to the cheese and take your binders.

My husband lives for Pierogies, but I have restricted them in the past. Just wait till he tries these! Many thanks.

I was confused about the servings because the recipe says to divide the dough into 3 balls then cut each into 12 circles. So that would yield 36 pierogies in total. She says it makes 24 portions of 3 pierogies each, which would be 72. Thanks for clarifying Moderator comment: You are correct, it makes 12 portions. The portion size and nutrients have been corrected. Thank you!
